Lines of the new cereal tritordeum showing novel characteristics of interest for the production of cereal-based functional foods and with processing properties suitable for a range of applications including breads, biscuits, breakfast cereals, etc. The technology / product is a new cereal crop tritordeum which has been developed from the hybridization of durum (pasta) wheat with a wild barley species (Hordeum chilense). The new cereal resembles bread wheat and has agronomic performance and yield comparable to conventional wheat, but with improved resistance to drought and high temperature stress. Tritordeum was originally developed by scientists of the Spanish Research Council (CSIC), but has been licensed to our company which holds exclusive rights to the germplasm, breeding programme and all commercial exploitation of the crop. Further, no other group has been able to repeat the synthesis of the tritordeum hybrid so that our company has no direct competitors in bringing tritordeum to market. The novelty of tritordeum is that it has a range of characteristics not present in other cereals which give the opportunity to develop new cereal-based functional foods. Among these traits are included exceptionally high levels of the carotenoid anti-oxidant lutein, high levels of soluble fibre, high protein content, variation in starch, microelements. In terms of food application potential, tritordeum shows wide variation in processing quality: lines are available with high gluten strength suitable for traditional bread making processes, while other lines are suitable for biscuit processes or extruded products. In addition, organoleptic evaluations performed both by pur company and by independent testers show that tritordeum products have a very pleasant flavor, without off-flavours associated with cereals such as barley. As our company holds exclusive rights to tritordeum and also controls the germplasm for the crop, the company is in a position to offer and guarantee exclusive rights to business partner companies who may be interested in developing products based on the crop. This exclusivity may be at the level product / application or based on geographical regions, depending on the interests / activities of the partner. This gives partners the security that they can develop innovative products which will be free from direct competition in their product area / geographical market area. A market study analyzing the opportunities for tritordeum at the level of products / consumers / markets has been developed our company in conjunction with the ESADE Business School.
